Choosing carrots

Always make sure that you use young and fresh carrots which also have a minimum of fibre content. If required, do taste them before you cook. Carrots that have become old and mature have more percentage of fibre content thereby making them an irrelevant choice for making halwa.

Young carrots have a far sweeter flavour to them and result in an amazing gajar ka halwa in the end.

About Milk

Do make sure use whole or full-fat milk to get an amazing carrot halwa.  As for the low-fat type, what you can possibly do is simply reduce the amount of milk or go for a full-fat option. It is up to you to decide. About the amount of ghee (or butter) to use. You may skip it altogether as well.

And if you happen to be a vegan, you can make this halwa with almond or coconut milk.

Cooking

Never ever leave your halwa unattended. What it will do is simply burn the milk and destroy all the efforts that you made. You have no other option than to constantly stir the mixture.

Ingredients

  • Two tablespoons of butter (or ghee)
  • Cardamom 4 in number (also known as elaichi)

  2. Add the carrots after grating them and keep cooking on a medium gas flame while stirring often.

  4. When the milk has finally evaporated, you may proceed to add the sugar and also stir well so as to mix it properly.
  5. Sugar as you may have possibly guessed will be releasing a huge amount of moisture.
  6. So hence, keep cooking until half of the total amount of water content is evaporated, then stir them in butter (or ghee).
  7. Keep cooking the carrot halwa till the moisture evaporates completely.
  8. When done, it will start to smell aromatic and also thicken.
  9. Cardamom powder can be now sprinkled.
  10. Garnish the gajar ka halwa with nuts.
